Blueberry Mint Lemonade

It’s been roasting here on the East Coast, but my family and I have been keeping cool with a bit of air-conditioning and gallons of Blueberry Mint Lemonade. We love that we’re cooling off and getting a shot of antioxidants (from the blueberries) at the same time. Kids love the blueberries tickling their lips as they sip and older kids and adults seem to like the blueberry bling in their glasses.

This refreshing lemonade is easy to make. I used “Italian Volcano” brand organic, fresh-pressed lemon juice, which is 100 percent lemon juice. If you can’t find this product, use fresh-squeezed lemon juice from actual lemons and, by all means, do not use reconstituted lemon juice.

I have borage plants growing in my garden this summer, and I snipped a few blossoms to garnish this refreshing beverage. Just a bit of mint syrup will lend spark to the drink and a cooling after-effect.

Recipe: Blueberry Mint Lemonade (Make 64 ounces)


Ingredients
7 cups spring water

1 cup fresh pressed or fresh squeezed lemon juice 
3/4 cup sugar
1 pint organic blueberries (rinsed and divided)
1 large lemon, sliced thinly, seeds removed
1/8 teaspoon mint syrup
Edible flower blossoms or a sprig of mint for garnish

Directions:

  1. Pour spring water into a large serving pitcher.
  2. Add lemon juice and sugar. Stir to mix ingredients.
  3. Drop half of the whole blueberries into the pitcher and add several slices of lemon.
  4. Add mint syrup and stir gently to blend ingredients.
  5. Add a few blueberries and a lemon slice to each serving glass; pour lemonade into serving glasses.
  6. Garnish with edible flowers, such as borage blossoms, or sprigs of mint.

    Blueberry, lemon and mint – yes, please! I’ve never heard of fresh-pressed lemon juice, but I’ll definitely look for it. It would be so much easier than juicing lemons!
